Chocolate No-Bake Cookie Recipe

Okay, so I JUST posted the recipe for Peanut butter no-bake cookies the other day..  And now, you get to see the recipe for the ‘normal’ chocolate no-bake cookies!  (Because who doesn’t love chocolate?!)

Due to the amazing work that the local firefighters do, I made no-bake cookies for my boyfriend to take over to the fire station for their training the other day.  As a thank you for all they do.  They truly are brave men, who deserve lots and lots of yummy cookies!

(Side note, these cookies are firefighter approved and the firefighters LOVED them!)

So without further ado, let’s get onto the recipe..  (Sadly, no pictures come with this recipe, but I will add a picture the next time I make them (which is hopefully soon))

What you need:

  • 2 Cups of Sugar
  • 1 Stick of Butter
  • 1/2 Cup of Milk
  • 1/4 Cup of Cocoa Powder
  • 1 Tablespoon Vanilla
  • 1/2 Cup Peanut butter
  • 3 Cups of Oatmeal

Directions:

(Before you start:  Make sure you put wax paper down on a countertop or table!  As soon as the cookies are done, they will need to be placed on the wax paper to harden.)

1.  Add the Butter to a large sauce pan and let it melt fully on MEDIUM heat.

2.  Once the Butter is fully melted, add the Milk and Sugar, stir until it is fully combined.

3.  Add the cocoa powder and stir until completely combined (it should be all brown, no white liquid left in the pan!).

4.  Turn the heat up to HIGH and wait for it to start boiling.  Once it starts boiling, let it boil for 60 seconds (count ‘mississippi’s’, or put a timer on your phone) and take it off the burner after 60 seconds (Remember to turn the burner off!).  (This step is very important, as it can make or break the recipe.  Letting it boil for too long or too short a time will cause them not to set up!)

5.  Quickly add the Vanilla and Peanut Butter, stir.  Now add the Oatmeal and stir.  It should be starting to set up as you stir.  Make sure you stir completely to ensure all of the Oatmeal is covered by the chocolate sauce mixture.

6.  Bring the pan over to the wax paper (careful, it’s hot!) and start to scoop spoonful’s out onto the wax paper.  The cookies can be as big or as small as you want them (depending on the size of the spoon).

7.  Let the cookies cool down a bit and harden, and they’ll be ready to eat!  (Or just eat them now and be careful not to burn your mouth!)
