These cookies are not only really yummy, but they are healthier than normal chocolate chip cookies and they stay soft no matter how much you overbake them. (Which is good because I almost burned them the first time I made them!)

What you need:
- Two large eggs
- 1/2 Cup packed light brown sugar
- 1 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 1 teaspoon pure vanilla
- 1 Cup organic peanut butter (has to be organic or natural PB in order to work)
- 1 Cup old-fashioned oats
- 1/2 Cup chocolate chips

What to do:
1. Set oven to 350 degrees.
2. In large bowl, mix eggs and brown sugar until combined. Add in baking soda and sea salt and vanilla, stir again.
3. Add in peanut butter, oatmeal, and chocolate chips and stir. Please remember to stir the peanut butter before adding, as all of the oils will be at the top! (Should look like the image below.)

4. Put about 2 tablespoons at a time (per cookie) on a cookie sheet and repeat until cookie sheet is full. Place in oven for 10 minutes.
5. When done in oven, pull them out and let them sit for a minute before moving them over to a cooling rack to cool.

6. Let them cool long enough to pick them up without them breaking. Eat warm or cooled, both are delicious!
